Add sugar and cinnamon stick and stir until the sugar is dissolved. Lower heat to a simmer.
Simmer for 10 minutes and remove from the heat. Let sit for another 10 minutes and remove the cinnamon stick. Store until ready to use.
Iced Cinnamon Coffee
Brew the coffee and allow it to cool to room temperature. If you want to enjoy it immediately, add an ice cube to temper it and cool it quickly. You can also place it in the freezer while you get everything else ready to help cool it down.
Pour the coffee over ice and add as much some of the cinnamon simple syrup to sweeten it to your taste. (for the nutritional information I used 1 tsp.)
Froth the milk in a small milk pitcher or measuring cup.
Place a spoon just over the coffee with the back of the spoon facing up. Slowly pour the frothed milk over the back of the spoon. Sprinkle the top of the froth with a bit of ground cinnamon if you desire!
