What You Will Need to Make It

Strawberries

I love all types of berries and always have a pint or two in my fridge. They are packed full of fiber, antioxidants, and vitamin C and are an easy way to get my fruit in for the day. Mix them into yogurt, top your oatmeal with them, or enjoy them in a salad like this or my Cucumber Strawberry Salad.  

The MIND Diet recommends eating at least 3 servings of berries, including strawberries a week to reduce the risk of Alzheimer’s disease. 

Kiwi

These fuzzy little fruits also contain antioxidants, vitamins, and fiber. They have a low glycemic index, meaning they don’t raise your blood sugar dramatically. Kiwi fruit also appears to help with digestion and may help reduce LDL (bad) cholesterol and raise HDL (good) cholesterol levels. Str

They are tangy and a little acidic, which balances the sweetness of the strawberries in this recipe.

Kiwi fruit contains an enzyme called “actinidin.” This enzyme helps break down proteins and may help with digestion. While great for our digestive health, it can also break down proteins in food making them useful for marinades but challenging when working with dairy-containing desserts as combining them can cause them to separate.

Greek Yogurt

You can use vanilla or plain Greek yogurt, Almond milk yogurt, or Soy yogurt to make your topping or dip. I like plain Greek yogurt because I can control how much sugar I add, and the same for plain almond milk or soy yogurt.  

Honey and Turbinado Sugar

I use both in this recipe. The honey is mixed into the yogurt and I add a little turbinado (or raw) sugar to the fruit. If your strawberries are super sweet you can probably skip the added sugar but I felt like it needed just a little boost of sweetness. 

Lemons

One or two lemons will be plenty and you’ll use both the zest from the lemon as well as the juice. The zest contains essential oils that are packed with a burst of lemon flavor and scent. The juice also adds lemon flavor and thins out the yogurt. 

Mint

Fresh mint is not necessary, but it adds a bright herby flavor to the salad. 

How to Make the Strawberry Kiwi Salad

Step 1: Make the Lemon Yogurt Topping

Start by zesting the lemon and then juicing it. Place the yogurt in a small bowl and mix in the lemon zest, honey, and lemon juice. Set it aside. 

Step 2: Prep and Mix the Fruit

  • Remove the stem from the strawberries and cut them in quarters. Here’s a video of a fun way to remove the stem and hull from strawberries. 
  • Peel the kiwi fruit and slice it into quarters and then quarters again.

  • Place the strawberry quarters and kiwi in a bowl and toss them with a little turbino sugar and chopped mint leaves. 

Step 3: Serve

Place a cup of the mixed fruit in a bowl and serve with the lemon yogurt on the side or a dollop on top of the fruit. 

Easy Spring Strawberry Kiwi Salad

Variations

  • You could swap lime juice and zest in the yogurt in place of the lemon.
  • Mix in some extra fruit – try adding blueberries along with the strawberries and kiwi fruit.
  • Serve this fruit salad over a bed of baby spinach. 

Storage Tips

Store the fruit and the yogurt in separate containers. The enzyme in the kiwi fruit will cause the protein in the yogurt to break down and cause it to separate.

The fruit will last in the fridge for 2 – 3 days. The yogurt will last in the refrigerator for up to a week.

Ingredients
  

  • 1 cup strawberries quartered
  • 2 each kiwi fruits diced
  • ½ tsp turbinado or raw sugar
  • ¼ tsp chopped fresh mint

Lemon Yogurt Topping

  • ½ cup plain Greek yogurt
  • 2 tbsp fresh lemon juice
  • 1 ½ tsp fresh lemon zest (from 1 lemon)
  • 1 tsp honey

Instructions
 

  • In a medium bowl, combine the strawberries, kiwi fruit, sugar, and mint. Set aside.

Make the Yogurt Topping

  • In a small bowl combine the yogurt, lemon juice, lemon zest, and honey.
  • Stir to combine. The yogurt should be slightly thin but still hold its shape.
  • Place ½ cup of fruit in a small bowl. Serve with the yogurt topping on the side or top with 1 tbsp of the yogurt topping.
