Savory and Satisfying: Easy Avocado Chickpea Toast

If you love a satisfying, flavorful, and nutrient-packed meal, this Avocado Chickpea Toast is about to become your new go-to! Creamy smashed avocado with a zesty kick of lime and smoky paprika meets crunchy, roasted chickpeas—all piled high on hearty whole-grain toast. 

Not only is it delicious, but it’s also packed with fiber, healthy fats, and plant-based protein to keep you feeling full and energized. Avocados provide heart-healthy monounsaturated fats, while chickpeas add a boost of protein and gut-friendly fiber, making this toast a balanced and nourishing choice for breakfast or a snack. 

Whether you’re looking to add more plant-based meals to your routine or just need a fresh twist on your classic avocado toast, this recipe delivers on both nutrition and flavor!

What You Will Need to Make It

Avocado – 1 ripe avocado will be enough to cover 2 slices of bread.

Whole Grain Bread – Any whole grain bread is great. I like multi-grain bread like Dave’s Killer Bread, Pepperidge Farm, or Arnold 12 or 15-grain bread. If your grocery store has a good bakery they or a farmer’s market are also great places for getting good whole grain bread.

Lime Juice and Zest – Juice and zest from 1 lime will add a bright and vibrant flavor and will keep the avocado from turning brown too quickly.

Chickpeas – Roasted chickpeas add a nice crunch and give this recipe some added fiber. You can make your own or buy a packet. I like the Biena brand, but there are others available too. A plain sea salt is best.

Smokey Paprika – just a dash will give this a nice smoky flavor. You can also sprinkle a little on the top just before serving.

How to Make It

I love this recipe because you can pull this together in 5 minutes or less. The only cooking involved is to toast the bread!

Step 1 – Toast the Bread

Simple enough! Either in a toaster or under the broiler. Just get both sides nice and toasted and crispy.

Step 2 – Prep the Avocado Mix

Mash the avocado and mix in lime juice, zest, and a bit of paprika in a small bowl.

Step 3- Assemble the Toast

Spread the avocado mix on the toast. Top it with a couple of tablespoons of roasted chickpeas and a sprinkle of paprika. Add some cilantro for a bit of extra flavor if you’d like.

Storage Tips

Avocado does turn brown fairly quickly once exposed to air. But, if you need to make the mix ahead, the lime juice will help slow the oxidation down. I also recommend putting it in a container with a piece of plastic wrap sitting tightly on the avocado mix.

Ingredients
  

  • 2 slices whole grain bread
  • 1 avocado
  • 1 tsp lime juice
  • ½ tsp lime zest
  • tsp smoked paprika
  • ¼ cup roasted chickpeas

Instructions
 

  • Toast the bread on both sides until lightly browned.
  • In a small bowl, mash the avocado and mix in the lime juice, zest, and paprika.
  • Spread each slice of bread with half the avocado mixture. Top each avocado toast with 2 tablespoons of chickpeas.

Notes

You can roast your own chickpeas or use prepackaged ones. I like the Biena brand when I don’t have time to make my own.
